Toons Bridge Dairy

Who Are They?

Toons Bridge Dairy – True stars of our food scene in city & county.

What are they best known for?

The guys at the much-loved ‘Bridge Dairy pride themselves on their farm fresh Mozzarella, made with authentic Southern Italian techniques. Proprietors Toby Simmonds and Jenny-Rose Clarke make and dispatch their own Mozzarella within 24 hours. The team at Toons Bridge are always experimenting with new and innovative cheeses and in the past few years, their repertoire has expanded to include Ricotta, Halloumi, Burrata, Cultured Butter, Scamorza and Cacio Cavallo.

They also have the Real Olive Company in the heart of the English Market in Cork City, selling a dazzling array of mostly Mediterranean delicacies. It’s one of the busiest stalls in the Market.

How Do They Do It?

Toons Bridge Diary sources the highest quality local milks from grass-fed cow and sheep. They then use natural whey starter and traditional techniques to hand-make their cheeses.

Have They Been Successful?

Very. Toby and Jenny-Rose have created a highly productive and innovative dairy, shop and pizza café in rural Toons Bridge, outside the market town of Macroom in Cork.

They produce small-batch and seasonal artisanal cheeses with classic techniques.

What Is Their Philosophy?

Toons Bridge Dairy is all about integrity, creativity and the simple love of good cheese.

What Does The Future Hold?

Lots of experimentation and exciting new cheeses!

Can I Meet The Maker?

Do they allow site visits & tours? - Yes, travel out to Macroom (40 mins by car) and visit the pizzeria and the shop on site at Toons Bridge Dairy. Sample the full range of cheeses in a charming country-side setting. Toby occasionally gives tours of the dairy, and any interested cheese-lovers are welcome to enquire about visiting.

Are They On Social Media?

Yes, you can find Toons Bridge Diary on Twitter, Instagram and Facebook (@toonsbridge)

And Finally, What’s Their Pro-Tip When It Comes to Food, Drink or Entertaining?

It’s all about preparing great ingredients and keeping it simple. A cheese board should have some high quality, thin crackers and for an extra kick, maybe add some cornichons and Quince jelly. Be creative, experiment, see what goes well with your favourite cheeses.
