The guys at the much-loved ‘Bridge Dairy pride themselves on their farm fresh Mozzarella, made with authentic Southern Italian techniques. Proprietors Toby Simmonds and Jenny-Rose Clarke make and dispatch their own Mozzarella within 24 hours. The team at Toons Bridge are always experimenting with new and innovative cheeses and in the past few years, their repertoire has expanded to include Ricotta, Halloumi, Burrata, Cultured Butter, Scamorza and Cacio Cavallo.
They also have the Real Olive Company in the heart of the English Market in Cork City, selling a dazzling array of mostly Mediterranean delicacies. It’s one of the busiest stalls in the Market.
Toons Bridge Diary sources the highest quality local milks from grass-fed cow and sheep. They then use natural whey starter and traditional techniques to hand-make their cheeses.

Sample the full range of cheeses in a charming country-side setting. Toby occasionally gives tours of the dairy, and any interested cheese-lovers are welcome to enquire about visiting.
